A fun and cheesy side dish, super crisp on the outside and very flavorful!

Ingredients
  • 1 pound petite red potatoes
  • olive oil, kosher salt, pepper, crushed red pepper flakes
  • 1 cup shredded italian blend cheese
  • fresh thyme
Instructions
  1. Fill a saucepan with water, bring to a boil, salt the water with kosher salt and add potatoes. Boil for 12 minutes (if they are regular size potatoes and not petite, boil for 18 minutes).

  2. Drain potatoes and place on a lined baking sheet. Smash with a cup or mason jar. Drizzle each potato with olive oil and sprinkle with kosher salt, pepper, and crushed red pepper flakes (if you like a little heat).
  3. Bake in a 450 degree oven for 15-18 minutes. Remove from oven, add cheese and fresh thyme and bake for an additional 2 minutes.
