Leftover Turkey Chili is a delicious way to use all those turkey leftovers from the holidays, a yummy one pot meal that no one would guess is leftovers!

Ingredients
  • 2 Tbsps olive oil
  • 2 red bell peppers
  • 2 onions
  • 2 jalapenos
  • 1 poblano pepper
  • 5 cloves garlic
  • 6 cups diced leftover turkey (already cooked)
  • 1 12 oz can or bottle beer of choice
  • 1 28 oz can crushed tomatoes
  • 1 15 oz can petite diced tomatoes
  • 1/4 cup brewed coffee
  • 4 Tbsps chili powder
  • 1 Tbsp paprika
  • 1 Tbsp cumin
  • 1 Tbsp brown sugar
  • kosher salt, pepper to taste
  • Optional toppings: sour cream, cheese, crackers
Instructions
  1. Dice the red peppers, onions, jalapenos, poblano pepper (seeds and stems removed on all peppers), and garlic with either a knife or pulse in small batches in a food processor.

  2. In a large soup pot over medium heat add olive oil, red peppers, onions, jalapenos, and poblano pepper. Cook for 10 minutes, stirring occasionally.

  3. Add the garlic and cook for 1 more minute. Then add the remaining ingredients. Bring to a boil and reduce the heat to simmer for 30 to 40 minutes, stirring occasionally.

  4. Taste for seasoning and add more chili powder, kosher salt, or pepper if needed.

  5. Serve with toppings such as sour cream, cheese, and/or crackers.
