A one pan delicious meal that's easy to prepare
Dice the onion and slice the apples. Put the onion and apples in a 9x13 pan or sheet pan.
Add the olive oil, cinnamon, kosher salt, and pepper. Toss until evenly coated. Make room for the pork tenderloin and place in the middle of the pan.
In a small bowl whisk together the hoisin sauce and maple syrup. Brush this mixture on all sides of the pork tenderloin. Sprinkle the pork with kosher salt and pepper.
Place in a 400 degree oven for 30 to 40 minutes (until internal temp is 145 degrees). Toss the apples and onions halfway through cooking.
Sprinkle with fresh thyme if desired.
