Shrimp, sausage, and veggies with cheese and penne pasta
Boil the pasta according to package directions. Drain the pasta and set aside.
Set the same pot that you boiled the paste in over medium heat. Add 1 Tbsp of the olive oil, shrimp, kosher salt, pepper, and crushed red pepper flakes. Cook 2 to 3 minutes, stirring occasionally. Remove the shrimp and set aside.
Add the sliced sausage to the pot, cook 2 to 3 minutes stirring occasionally and set side.
Note: Smoked sausage is already cooked, just trying to brown and crisp the edges a bit.
Add the remaining 1 Tbsp olive oil, asparagus, diced onion, and garlic and more kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes, stirring occasionally.
Add the shrimp, sausage, and cooked pasta back into the pot along with the sun dried tomatoes, pesto, and mozzarella cheese. Stir until evenly mixed.
Taste for seasoning and add more kosher salt, pepper, or crushed red pepper flakes if needed.
