Ingredients
  • 1 pound ground breakfast sausage
  • 8 eggs
  • 1/4 cup milk
  • kosher salt, pepper
  • 1 Tbsp butter
  • 6 large burrito size tortillas
  • 2 cups shredded cheese of choice
  • 6 Tbsps maple syrup
  • olive oil cooking spray
Instructions
  1. Set a skillet over medium heat and add the ground breakfast sausage. Cook 6 to 8 minutes, breaking it apart as it cooks. After it's fully cooked, set aside on a plate.

  2. In a bowl add the eggs, milk, kosher salt, and pepper. Beat with a fork for one minute.

  3. In the same skillet over medium low heat add the butter. When the butter is melted add the eggs. Cook 4 to 5 minutes, stirring with a spatula, until the eggs are cooked and scrambled.

  4. Set up the burrito wrapping station with the tortillas, cheese, sausage, scrambled eggs, and maple syrup.

  5. In the center of each tortilla add some cheese, sausage, scrambled eggs, and one Tbsp maple syrup per burrito. Fold the sides in over the filling, fold the front part over the filling, and roll into a burrito (picture examples in post above).

  6. Place two to three burritos in the air fryer basket and spray both sides with the olive oil cooking spray. Set the air fryer to 390 degrees for 8 to 10 minutes. Repeat with another batch or two of remaining burritos.
