Spicy pork and veggies in a nice, crisp lettuce wrap
In a large skillet over medium heat add the olive oil, diced red pepper, diced onion, and shredded carrot. Cook 6 to 8 minutes, stirring occasionally
Move the veggies to one side of the skillet and add the pork to the empty side, add the soy sauce, Gochujang chili paste, honey, ginger, and garlic. Cook 10 to 12 minutes, breaking apart the pork and stirring occasionally. Taste for seasoning and add more soy sauce or Gochujang chili paste if desired.
Let cool to room temperature and serve in the lettuce wraps with the Spicy Korean Mayo drizzled over top.
