Loaded sweet potato wedges with lots of taco flavors

Ingredients
For the sweet potato wedges
  • 2 sweet potatoes each cut into 8 wedges
  • 2 Tbsp olive oil
  • kosher salt, pepper, cumin, chili powder, cinnamon to taste
For the toppings
  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 can corn
  • 1 cup crumbled Cotija cheese (or cheese of choice)
  • 1/2 cup sour cream
  • Optional toppings: cilantro, lime wedges, jalapenos, pickled red onion, avocado, black beans
Instructions
  1. Slice each sweet potato into 8 wedges and brush with olive oil, sprinkle with salt, pepper, cumin, chili powder, and cinnamon to taste.

  2. Bake at 425 for 20-25 minutes, flip halfway through.
  3. Brown up your ground beef or turkey in a pan over medium heat, breaking up the meat as it cooks for 5-8 minutes or until cooked through. Add taco seasoning (and water according to packet directions) and cook an additional 8-10 minutes over low heat.

  4. Prepare your other toppings as the sweet potatoes and meat are cooking.

  5. Top your sweet potato wedges with the taco meat and other toppings as desired.
