Breaded zucchini and air fried to crispy perfection
Cut the zucchini into fry size wedges.
Crack the eggs into a bowl and beat them together.
Add the panko, parmesan cheese, garlic powder, salt, and pepper into another bowl and stir until evenly mixed.
Dip each zucchini fry into the egg, then into the panko mixture, press the panko into the zucchini and place in the air fryer basket in a single layer. Repeat with remaining zucchini fries.
Spray lightly with olive oil cooking spray and set the air fryer for 15 minutes at 400 degrees.
Serve with the Garlic Parmesan Ranch Dipping Sauce.
Note: Depending on the size of your air fryer, these may need to be done in two smaller batches.
Mix all ingredients together and serve with the zucchini fries.
