Ingredients
Roasted Old Bay Shrimp Boil
  • 1 pound petite red potatoes
  • 1 pound jumbo shrimp (shells on)
  • 1 package smoked cajun andouille sausage (approx. 1 pound)
  • 4 ears corn on the cob shucked
  • 2 Tbsps olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp Old Bay seasoning (plus a little more to sprinkle over top)
Old Bay Aioli
  • 1/2 cup mayo or light mayo
  • 1 tsp garlic paste or garlic powder
  • 1 tsp lemon juice
  • 1 tsp Old Bay seasoning
  • 5-8 dashes Tabasco sauce
Instructions
Roasted Old Bay Shrimp Boil
  1. Boil the red potatoes in salted water for 7-8 minutes. Let them cool slightly and cut them in half.

    Note: If the red potatoes are not petite in size, add a few extra minutes to boiling time.

  2. Pat the shrimp dry with paper towels. Cut the smoked sausage into 1 inch pieces. Cut each ear of corn into 3 pieces.

  3. Line a large sheet pan with foil or parchment paper. Add the potatoes, shrimp, sausage, and corn to the pan along with the olive oil, lemon juice, and Old Bay seasoning. Toss until evenly coated. Sprinkle with a little more Old Bay over top.

  4. Place the baking sheet into a 425 degree oven for 20 minutes.

    Optional: Turn the broiler on high for the last 2 minutes to make everything more golden brown if desired.

  5. Serve with the Old Bay Aioli for dipping.

    Note: Peel the shell off shrimp before eating.

Old Bay Aioli
  1. Put all ingredients in a bowl and stir until evenly mixed. Serve with the Roasted Old Bay Shrimp Boil.
