A delicious and healthy dinner all on one sheet pan
Cut the smoked chicken sausage, red pepper, yellow pepper, red onion, and zucchini into 1 to 1 1/2 inch chunks. Place on a lined baking sheet.
Add the olive oil, balsamic vinegar, garlic powder, kosher salt, pepper, and crushed red pepper if using. Toss until evenly coated. Add more kosher salt and pepper over top if needed.
Place the baking sheet in a 425 degree oven for 35-40 minutes, toss the chicken sausage and veggies halfway through cooking.
Serve with crumbled goat cheese and basil over top.
