A whole smoked chicken with cajun garlic butter
Combine the melted butter, cajun seasoning, and garlic in a bowl. Stir until evenly mixed.
Rub two third of the cajun garlic butter over all sides of the whole chicken, separate the skin on the breasts and rub some of the butter between the skin and chicken breasts as well. Set the remaining one third of the butter aside to brush over top later. Sprinkle more cajun seasoning over top of the chicken if desired.
Place in a smoker set to 225 degrees for 4-5 hours or until the internal temp is 170 degrees. Brush with the remaining cajun garlic butter every hour.
Note: Can also be baked in the oven at 400 degrees for 1 hour, or until internal temp is 170 degrees
