Ingredients
  • 1 12 ounce package frozen popcorn shrimp
  • 1/2 to 3/4 cup buffalo sauce
  • 4 sub rolls (I used King's Hawaiian Mini Sub Rolls)
  • 1 1/2 cups thinly shredded lettuce
  • 1/2 cup ranch dressing
  • Optional toppings: tomatoes, pickles, blue cheese crumbles
Instructions
  1. Cook the shrimp in the oven or air fryer according to the package directions. I cooked mine in the air fryer at 400 degrees for about 12 to 15 minutes.

  2. When the shrimp are done, toss them in a bowl with buffalo sauce until evenly coated.

  3. Toast your sub rolls if desired and build each po boy with a bottom layer of the buffalo popcorn shrimp, thinly shredded lettuce, ranch dressing, and toppings of choice like tomatoes, pickles, and/or blue cheese crumbles if desired.
