In a large skillet over medium heat add the olive oil, diced onions, kosher salt, pepper, and crushed red pepper flakes to taste. Cook 5-6 minutes, stirring occasionally.
Add the zucchini noodles, garlic, and more kosher salt, and pepper. Cook 4-5 minutes, stirring occasionally.
Add the marinara/pasta sauce, pepperoni slices, and Italian seasoning, stir until evenly mixed and cook 1-2 minutes. Top with the mozzarella and parmesan cheese and remove from heat when cheese is melted.
Taste for seasoning, add more kosher salt, pepper, crushed red pepper, and/or Italian seasoning to taste.
