Air Fryer Breakfast Biscuit Bombs is an easy recipe using biscuits stuffed with cheese, egg, and ham or sausage then cooked in the air fryer!
Crack the eggs in a bowl and add milk, kosher salt, and pepper. Beat with a fork until evenly combined.
Set a skillet over medium low heat and add 1 tablespoon of the butter and the eggs. Cook the eggs, scrambling as they cook until done how you prefer, about 3 to 4 minutes.
Stir in the cooked sausage or ham and the cheese, mix together with the eggs in the skillet until combined. Remove from the heat and let cool.
Separate the biscuits and place on a flat surface. Roll each slightly with a rolling pin.
Place 1/8 of the egg, meat, cheese mixture in the center of each biscuit. Fold the biscuits around the filling, overlapping slightly, and roll into a ball with your hands. Place each in the air fryer basket, seam side down.
Set the air fryer to 370 degrees for 7 to 8 minutes. Melt the remaining 2 tablespoons of butter and mix with the maple syrup. Brush this mixture over the breakfast bombs and cook another 2 to 3 minutes in the air fryer.
Let cool slightly before serving.
