Roasted Balsamic Parmesan Asparagus is a simple side dish recipe with a few ingredients but big on flavor, healthy, and great presentation

Ingredients
  • 1 pound asparagus
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • kosher salt, pepper, Italian seasoning
  • freshly shaved parmesan cheese
  • balsamic glaze (vinegar section of grocery store)
Instructions
  1. Trim the bottom inch or two from the bundle of asparagus and spread evenly on a baking sheet.

  2. Drizzle the olive oil and balsamic vinegar over the asparagus, and season with kosher salt, pepper, and Italian seasoning. Toss until the asparagus is evenly coated and seasoned.

  3. Place in a 425 degree oven for 8 to 10 minutes. Sprinkle some shaved Parmesan over top during the last minute of cooking.

  4. Top with more parmesan cheese and balsamic glaze before serving.
