When the shrimp are finished cooking season them with Old Bay seasoning and squeeze some lemon wedges over top of the shrimp.
Toast your sub rolls if desired and build each po boy with a bottom layer of the cooked and seasoned popcorn shrimp, remoulade sauce or old bay aioli, thinly shredded lettuce, and toppings of choice like pickles or tomatoes if desired.
