Broccoli Cranberry and Goat Cheese Salad is a holiday worthy side dish, but easy enough to make for a week night side dish!

Ingredients
  • 1 bunch broccoli cut into florets
  • olive oil, kosher salt, pepper
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1/4 cup crumbles goat cheese
  • 1/4 cup dried cranberries
  • 1/4 cup toasted pine nuts
Instructions
  1. Put the broccoli florets on a baking sheet and drizzle with olive oil, season with kosher salt and pepper. Toss until the broccoli is evenly coated.

  2. Place the broccoli in a 450 degree oven for 12 to 15 minutes or until the broccoli is cooked how you like.

  3. Then drizzle more olive oil over top and add the balsamic vinegar and honey. Toss until combined, taste for seasoning and add more kosher salt and pepper if needed.

  4. Transfer to a serving dish and top with the crumbled goat cheese, dried cranberries, and toasted pine nuts.
