Ingredients
  • 1 pound ground breakfast sausage
  • 4 tablespoons butter
  • 15 oz frozen shredded hash browns
  • kosher salt, pepper
  • 6 eggs
  • 1/4 cup milk
  • 2 cups shredded cheese (I used Mexican blend)
  • Optional: chives, hot sauce of choice, sour cream, salsa
Instructions
  1. Set a large skillet over medium heat and once hot add the breakfast sausage. Cook 4 to 5 minutes stirring and breaking apart with a spatula. Once cooked removed and place on a plate lined with paper towels.

  2. Add 3 tablespoons of the butter to the same skillet over medium heat and add the hash browns, kosher salt, and pepper. Cook 9 to 11 minutes stirring a few times and pressing the hash browns into the skillet.

  3. While the hash browns cook, crack the eggs into a bowl and add the milk, kosher salt, and pepper. Beat with a fork until combined.

  4. Remove the hash browns from the skillet. Place the same skillet over medium low heat and add the remaining one tablespoon butter and the scrambled egg mixture. Cook 3 to 4 minutes or until the eggs are scrambled and cooked how you prefer.

  5. Once the eggs are cooked add the cooked hash browns and cooked sausage into the skillet along with the shredded cheese. Stir until evenly combined.

    Note: You can save some of the shredded cheese to sprinkle over top if desired.

  6. Serve the breakfast hot mess express with toppings such as chives, hot sauce, sour cream, and salsa.
