Steak with Garlic Chive Cream Sauce starts with an easy to make homemade recipe for cream sauce served over grilled steak of choice
Set a saucepan over high heat and add the butter, broth, heavy cream, fresh chives, garlic, Dijon mustard, kosher salt, pepper, and crushed red pepper flakes.
Bring this to a boil and reduce the heat to medium low, simmer 14 to 16 minutes. Let the sauce come to room temp while you grill the steaks, it will get thicker as it sits.
Note: Watch carefully when bringing to a boil, if it starts to bubble over remove from heat for a moment.
Coat the steaks with the olive oil and season both sides with kosher salt and pepper.
Preheat the grill to medium high heat. Grill the steaks 3 to 5 minutes per side depending on thickness and how you prefer them cooked.
Serve the steaks with the herb cream sauce and more chives sprinkled over top with mashed potatoes if desired (the cream sauce is so good on the potatoes).
