Ingredients
  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • pinch of kosher salt
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 5 Tablespoons melted butter divided
  • 1 14.75 ounce can cream style corn
  • 1/2 cup honey
  • Optional: more honey to drizzle over top, hot sauce
Instructions
  1. Put the cornmeal, flour, sugar, baking powder, baking soda, and kosher salt in a bowl. Whisk until combined.

  2. Add the buttermilk, eggs, 3 Tablespoons of the butter, cream style corn, and honey. Stir until combined.

  3. Spread the remaining 2 Tablespoons melted butter in a 10 inch cast iron skillet or 9x13 foil pan. Pour the batter into the pan.

  4. Preheat the Trager to 400 degrees. Once preheated place the pan on the grill grate for 28 to 32 minutes. (You can also bake this for the same time in a 400 degree oven)

Note: It is normal for the top to be more pale in color compared to cooking in the oven.

  5. Serve with extra honey and/ or hot sauce drizzled over top if desired.
