Italian Sub Pasta Salad has all the yumminess of an Italian sub but served with tortellini as a pasta salad, a perfect side for any party

Ingredients
  • 1 19 oz bag frozen cheese tortellini
  • 15 to 20 slices pepperoni
  • 12 to 15 slices salami
  • 8 to 10 slices deli ham
  • 8 slices provolone cheese
  • 3/4 cup mayo (possibly more)
  • 3/4 cup Italian dressing (possibly more)
  • 2 Tbsps dried oregano
  • kosher salt, pepper
  • 1 pint grape tomatoes
  • 1 cup shredded iceberg lettuce
  • 1/2 cup banana pepper rings
Instructions
  1. Boil the tortellini according to the package directions (mine boiled in salted water for 3 minutes). Drain and rinse with cold water.

  2. Cut the pepperoni in half, and cut the salami, ham, and provolone cheese into smaller pieces.

  3. Put the cold tortellini in a bowl and add the pepperoni, salami, ham, cheese, mayo, Italian dressing, oregano, kosher salt, and pepper. Toss until combined and store covered in the fridge until ready to serve.

  4. When ready to serve add the tomatoes, lettuce, and banana peppers. Stir until combined and add more mayo and Italian dressing if needed (mine needed just a bit more for my taste). Serve right away.
