Ingredients
  • 3 cups Cornflake cereal
  • kosher salt, pepper
  • 1 egg
  • 1 pound chicken breast
  • non stick cooking spray
  • Optional: dipping sauce of choice such as ranch, sweet chili sauce, BBQ, honey mustard, etc.
Instructions
  1. Put the Cornflakes in a gallon size plastic bag and use a rolling pin or a cup to crush them and roll until they are a breadcrumb consistency.

  2. Put the crushed Cornflakes, kosher salt, and pepper in a bowl and mix together.

  3. Crack the egg in a separate bowl and beat with a fork.

  4. Cut the chicken into bite size pieces or strips. Put each piece of chicken into the egg and then into the Cornflakes, pressing so the Cornflakes stick and are well coated. Place the chicken into the air fryer basket.

  5. Spray the chicken with non stick cooking spray. Set the air fryer to 400 degrees for 14 to 15 minutes.

  6. Serve with dipping sauces if desired.
