Salmon Salad with Lemon Vinaigrette is a healthy recipe full of superfoods like salmon, walnuts, avocado and a homemade lemon dressing
Brush the salmon fillets with olive oil and season with kosher salt and pepper, and a seasoning blend of choice if desired.
Cook the salmon in the air fryer at 400 degrees for 8 to 10 minutes or place on a baking sheet and bake in a 400 degree oven for 8 to 10 minutes. Let the salmon cool.
Note: I made the dressing as the salmon cooled.
Divide the lettuce mix between four plates or bowls. Top each with a piece of salmon, walnuts, avocado, and serve with the Lemon Vinaigrette.
Put all ingredients for the vinaigrette in a mason jar or container with a lid. Shake until the dressing is combined. Taste for seasoning and add more kosher salt, pepper, honey. and/ or ginger if desired.
Store any leftovers in a sealed container in the fridge for a few days.
