Buffalo mac and cheese with chicken, breaded, and air fried to crispy perfection

Ingredients
  • 1 20 oz container Bob Evans Mac and Cheese
  • 1 cup diced, cooked chicken
  • 1/4 cup buffalo sauce (I used Frank's Buffalo Wing Sauce)
  • 2 eggs beaten
  • 2 cups panko bread crumbs
  • olive oil spray
Instructions
  1. In a bowl add the Bob Evans Mac and Cheese, diced chicken, and buffalo sauce. Stir until evenly combined.

  2. Line a baking sheet or tray with parchment paper or foil. Drop spoonfuls of the mac and cheese onto the sheet. Freeze at least 1 hour.

  3. Beat the eggs in a bowl. Pour the breadcrumbs in another bowl. Remove 7 of the mac and cheese bites from the freezer. Dip each in the egg mixture and then into the panko breadcrumbs. Place them into the air fryer basket, not touching. Spray lightly with some of the olive oil non stick cooking spray. 
  4. Set the air fryer for 15 minutes at 390 degrees. Remove from basket, repeat with remaining 7 mac and cheese bites.
