Ingredients
  • 4 yellow onions
  • 4 Tbsps butter
  • 3 Tbsps brown sugar
  • 3 Tbsps balsamic vinegar
  • kosher salt, pepper, crushed red pepper flakes
  • 8 oz block cream cheese
  • 3/4 cup mayo
  • 2 cups shredded mozzarella cheese
  • 1/4 cup diced green onions
  • 1 pound cooked and crumbled bacon
Instructions
  1. Slice the onions and put them in a cast iron skillet or foil pan. Add the butter, brown sugar, balsamic vinegar, kosher salt, pepper, and crushed red pepper flakes.

  2. Put the skillet or pan on the Traeger grill/smoker set to 250 degrees for about 3 hours. Stir it every half hour.

Note: Cook time will depend on thickness of onion slices and smoker temp, they may be ready before the 3 hour mark or they may take a little longer.

  3. Add the cream cheese, mayo, mozzarella cheese, green onions, and cooked bacon crumbles. Cook on the Traeger still set to 250 degrees 30 to 45 more minutes, stirring a few times.

  4. Once it's all melted together serve with crackers, Fritos Scoops, or toasted French bread.

Note: I sliced a French baguette, brushed each slice with olive oil and seasoned with kosher salt and pepper. Then baked in a 400 degree oven for 5 minutes.
