Ingredients
  • 1 1/2 pounds chicken breasts
  • kosher salt, pepper
  • 2 yellow onions thinly sliced
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp worcestershire sauce
  • 1/2 Tbsp sugar
  • 1/2 Tbsp cornstarch
  • 2 cups cubed ciabatta or italian bread
  • 6 slices provolone or mozzarella cheese
  • Optional: fresh thyme
Instructions
  1. Place the chicken in the crockpot, sprinkle both sides with kosher salt and pepper. Put the sliced onions and garlic over the chicken.

  2. In a bowl whisk together the beef broth, balsamic vinegar, worcestershire sauce, sugar, and cornstarch. Pour this mixture over the chicken and onions. Cook on low for 6-8 hours.

    Recommend to turn the crock pot on high for the last hour, the sauce will thicken more.

  3. Before serving break the chicken apart with a fork into smaller pieces, place the cubed bread and cheese over top and cover the crockpot until melted. Serve with fresh thyme over top if desired.
