Chicken Plantain Rice Bowls are easy to make by combining Spanish rice with chicken, corn, black beans, and any other topping you like
Cook the Spanish rice according to package directions (mine microwaved for 90 seconds per pouch).
Warm up the chicken, corn, and black beans either in a microwave or in skillets/ saucepans.
Divide the rice evenly between 4 bowls and top each with the chicken, corn, black beans, cheese, plantain chips and other toppings such as sour cream, salsa, lime, hot sauce and cilantro.
