An easy and healthy low carb meal that's insanely delicious
Sprinkle both sides of the fish with chili powder, paprika, cumin, kosher salt, and pepper. Place the fish in the air fryer basket for 12 minutes set to 400 degrees (or in a skillet over medium heat with 1 Tbsp olive oil for 3-4 minutes per side).
Cook the cauliflower rice bag in the microwave according to the package directions. Once cooked add the lime juice and cilantro. Toss until evenly mixed.
Divide the cauliflower rice evenly between two bowls. Top each bowl with the fish, diced avocado, pickled red onions.
Mix the sour cream together with the Sriracha and drizzle over top of each fish taco bowl.
Note: These could also be served as a taco instead of over cauliflower rice, just put the fish and toppings in a soft flour tortilla and top with cilantro, lime juice, pickled peppers, and avocado with the Sriracha sour cream drizzled over top.
