Coconut breaded wings with a yummy Malibu Rum sauce
Pat the chicken dry with paper towels.
In another bowl beat the eggs with the Malibu Rum.
In a third bowl combine the flour and salt.
Bread the chicken wings by coating each in the flour mixture, then egg mixture, and finally coating it in the panko coconut mixture, pressing the panko and coconut into the wings slightly.
In the oven: Place the wings on a lined baking sheet, or on a wire rack over a lined baking sheet. Place in a 375 degree oven for 40-45 minutes. Flip the wings and turn the broiler on high for a minute or two.
Serve with Malibu Rum Sauce on side to dip.
Whisk all ingredients in a saucepan. Bring to a boil and reduce heat to simmer for 15 minutes, stirring occasionally. The sauce will thicken as it cools.
