Ingredients
  • 2 pounds flank or flat iron steak
  • olive oil, kosher salt, pepper
  • 1 stick butter at room temp
  • 4 oz goat cheese log at room temp
  • 2 Tbsps garlic paste
  • 1/4 cup chopped, fresh herbs (I used basil, thyme, and rosemary)
  • kosher salt, pepper
Instructions
  1. Brush the steak with olive oil and season both sides with kosher salt and pepper.

  2. Preheat either your grill or a large skillet to medium high heat, Cook the steak 4 to 6 minutes per side, depending on how you like it cooked and how thick the steak is.

  3. While the steak rests, make the goat cheese butter by putting the butter, goat cheese, garlic, herbs, kosher salt, and pepper in a bowl, Beat with a hand mixer for 1 minute.

  4. Slice the steak against the grain and top with the goat cheese butter. Store any extra butter in the fridge.
