Yummy Mediterranean ingredients in a crisp and delicious quesadilla
In a large skillet over medium heat (or Blackstone griddle preheated to medium/ medium low), pour 1/2 Tbsp of the sun dried tomato oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet.
On one side of the tortilla spread some pesto, lay 3 slices of cheese, some of the feta, and some of the sun dried tomato slices. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes.
Remove from pan (or griddle) and repeat with the remaining ingredients. Makes 4 quesadillas.
Note: On the Blackstone griddle or flat top grill you can make all four quesadillas at once.
