Ingredients
Asian Chopped Chicken Salad
  • 3 cups chopped lettuce
  • 2 cups chopped red cabbage
  • 2 cups shredded carrots
  • 1 cup chopped cilantro
  • 1 cup shelled edamame
  • 1 red bell pepper thinly sliced
  • 2 cups cooked, shredded chicken
  • 1/2 cup chow mein noodles
  • 1/2 cup chopped peanuts
Peanut Dressing
  • 1/4 cup smooth peanut butter
  • 1/3 cup soy sauce
  • 3 Tbsps honey
  • 2 Tbsps rice vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp lime juice
  • 1/2 Tbsp garlic paste
  • 1/2 Tbsp ginger paste
Instructions
Asian Chopped Chicken Salad
  1. Combine all ingredients in a large bowl and toss until evenly mixed. Serve with peanut dressing.

    Note: For meal prepping this salad, divide into containers and put the peanut dressing in containers on the side.

Peanut Dressing
  1. Whisk all ingredients together in a bowl until evenly mixed, approx 1 minute of whisking.
