Garlic Parmesan Halibut and Asparagus is a healthy and delicious one pan meal baked in the oven, a new favorite in our home!

Ingredients
  • 1/4 cup mayo
  • 1/4 cup plus 1 Tbsp grated parmesan cheese
  • 1 1/2 Tbsps garlic paste or fresh minced garlic
  • kosher salt, pepper
  • 1 pound asparagus
  • 1 Tbsp olive oil
  • 1 pound halibut (cut into 2 or 3 fillets)
  • 1/4 cup panko bread crumbs
Instructions
  1. In a small bowl, whisk together the mayo, 1/4 cup of the parmesan cheese, 1 Tbsp of the garlic, kosher salt, and pepper.

  2. Trim the bottom inch or two off of the asparagus and place in a bowl. Add olive oil, remaining 1 Tbsp parmesan cheese, remaining 1/2 Tbsp garlic, kosher salt, and pepper and toss the asparagus until it's evenly coated.

  3. Place the asparagus and halibut fillets (skin side down) on the same baking sheet, spread the garlic parmesan mayo over top. Sprinkle the panko bread crumbs over top of the halibut and pat them down slightly.

  4. Bake in a 400 degree oven on the middle rack for 12 minutes, then turn the broiler on high for an additional 2 to 3 minutes.
