Spicy Korean Chicken Sliders are the perfect game day snack, served on King's Hawaiian Original Sweet Slider Buns for that sweet and spicy combo!

Ingredients
  • 4 large boneless, skinless chicken thighs
  • 3 Tbsps soy sauce
  • 3 Tbsps gochujang chili paste
  • 1 Tbsp garlic paste or minced garlic
  • 1 Tbsp ginger paste or minced ginger
  • 1 Tbsp honey
  • 1 Tbsp lime juice
  • ground red pepper (as much or as little depending on spice preference)
  • 3/4 cup mayp
  • vegetable oil (enough to fill a saucepan a few inches deep)
  • 1 cup flour
  • kosher salt, pepper
  • 1 package King's Hawaiian Original Sweet Slider Buns
  • Optional: slaw or lettuce
Instructions
  1. Cut the chicken thighs in half so they are the perfect size for the King's Hawaiian Original Sweet Slider Buns. Put the trimmed chicken thighs into a gallon size plastic bag.

  2. Add the soy sauce, gochujang chili paste, garlic, ginger, honey, lime juice, and ground red pepper to a bowl and whisk until evenly mixed. Remove 1/4 cup of this mixture and set aside, add the rest to the bag with the chicken. Massage the bag until evenly combined and marinate in the fridge for several hours or overnight.

  3. Combine the mayo with the 1/4 cup of the sauce and stir together. Store this spicy mayo in the fridge to top the sliders.

  4. Set a saucepan over medium heat and fill a few inches deep with vegetable oil. Once the oil is 325 degrees (approx 5 minutes) place four pieces of chicken into the flour to coat and gently place in the oil.

  5. Put the flour in a bowl and season with kosher salt, pepper, and more ground red pepper.

  6. Fry the chicken 8 to 9 minutes. Place the chicken on paper towels to drain excess oil. Repeat with remaining chicken.

    Note: Use an instant read thermometer to make sure the chicken is at 170 degrees.

  7. Put a piece of fried chicken on the King's Hawaiian Original Sweet Slider Buns (which come pre-sliced making this even easier) top with the spicy mayo and slaw or lettuce if desired.
