Ingredients
  • 1 8 oz block feta cheese
  • 1 egg
  • 3/4 cup panko bread crumbs
  • olive oil (enough to coat the bottom of a skillet)
  • Optional: crackers, crostini, spicy honey, jam
Instructions
  1. Cut the block of feta in half creating 2 thinner blocks of cheese, approx. half inch thick (pictures in post above).

  2. Crack the egg into one bowl and beat with a fork. Put the panko bread crumbs in another bowl.

  3. Pour enough olive oil to coat the bottom of a skillet and put the skillet over medium heat.

  4. As the oil heats up put one block of feta into the egg, flip so both sides are coated and then into the panko and coat both sides.

  5. Put the feta into the skillet and pan fry 2 minutes per side. Repeat with the other block of feta.

  6. Serve right away with crackers, crostini, spicy honey, and/or jam if desired.
