Ingredients
  • 1 pound ground Italian sausage
  • 1 Tbsp olive oil
  • 1 onion diced
  • 1 red bell pepper diced
  • kosher salt, pepper, crushed red pepper flakes
  • 5 cloves garlic minced
  • 1 15 oz can crushed tomatoes
  • 4 cups chicken broth
  • 1 Tbsp Italian seasoning
  • 1 pound gnocchi
  • 3 cups chopped, fresh spinach
  • 1 cup heavy cream
Instructions
  1. Set a large soup pot over medium heat. Add the Italian sausage and cook 7 to 8 minutes, breaking it apart as it cooks. Remove from the pot and set aside.

  2. Add the olive oil to the same pot, once hot add the diced onions, red pepper, kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes, stirring occasionally.

  3. Add the garlic and cook 1 minute, then add the cooked Italian sausage, crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil and reduce the heat and simmer 10 minutes.

  4. Add the gnocchi, spinach, and heavy cream and simmer 10 more minutes. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and Italian seasoning if needed.
