Ingredients
  • 1 1/2 to 2 pound flank steak
  • 2 Tbsps olive oil
  • kosher salt, pepper
  • 3 Tbsps butter at room temp
  • 2 oz crumbled blue cheese
  • 1/2 Tbsp garlic paste or finely minced garlic
Instructions
  1. Brush the steak with 1 Tbsp of the olive oil and sprinkle both sides with kosher salt and pepper.

  2. In a small bowl add the butter, blue cheese, and garlic. Mash together until evenly mixed.

  3. In a skillet over medium high heat add the remaining olive oil and the steak. Cook 3-4 minutes per side for medium rare to medium doneness. During the last minute of cooking spoon 1 Tbsp of the blue cheese butter on top of the the steak and let it melt into the steak.

  4. Remove the steak from the pan and let it rest 5 to 10 minutes.

  5. Slice the steak against the grain and serve with remaining blue cheese garlic butter over top.
