Hibachi Chicken Fried Rice made on the flat top grill is very similar to Benihana fried rice and even has a homemade yum yum sauce!

Ingredients
Yum Yum Sauce
  • 3/4 cup mayo
  • 1/4 cup ketchup
  • 1 Tbsp sugar
  • 1 tsp paprika
  • 1 tsp garlic powder
Hibachi Fried Rice
  • 2 Tbsps sesame or vegetable oil
  • 6 cups cooked Jasmine rice cooled
  • 1 onion diced
  • 3 eggs
  • 1 12 oz bag frozen peas and carrots thawed
  • 1/2 cup soy sauce
  • 3 Tbsps butter
  • 4 cloves garlic minced
  • 1 Tbsp sesame seeds
  • kosher salt, pepper
Chicken
  • 1 Tbsp sesame or vegetable oil
  • 1 1/2 pounds chicken breasts cut into bite size pieces
  • 1 Tbsp soy sauce
  • 1 Tbsp lemon juice
Instructions
Yum Yum Sauce
  1. Add the mayo, ketchup, sugar, paprika, and garlic powder in a bowl and whisk until evenly mixed.

Hibachi Fried Rice
  1. Heat the flat top griddle or hibachi grill to medium high heat for at least 5 minutes.

  2. Add the sesame oil and spread with hibachi spatula, add the rice, onion, and eggs. Cook 2 minutes and mix together with hibachi spatulas.

  3. Add the peas and carrots and cook 1 minute, mixing those together with the rice.

  4. Add the soy sauce, butter, garlic, sesame seeds, and a small amount of kosher salt and pepper. Mix together and cook for 6 to 7 minutes, flipping the rice over occasionally.

Chicken
  1. During the last 2 minutes of the rice cooking, move the rice to the side to make room for the chicken. Add the oil directly on the flat top and add the chicken, soy sauce, and lemon juice. Cook 4 to 5 minutes, flipping a few times and mix the chicken together with the rice.

    Serve the chicken fried rice with the Yum Yum Sauce.
