Ingredients
  • 1 flank steak or flat iron steak (approx 2 pounds)
  • 2 ears corn on the cob
  • 1 red bell pepper
  • olive oil, kosher salt, pepper
  • 1 avocado diced
  • 2 Tbsps lime juice
  • 1/2 cup chopped cilantro
Instructions
  1. Brush all sides of the steak, corn, and red pepper with olive oil and sprinkle with kosher salt and pepper.

  2. Preheat the grill to medium high. Grill the steak, corn, and red pepper for 8 to 10 minutes total, turning a few times as they cook.

  3. Let the steak rest as you make the corn and avocado relish.

    Cut the kernels off of the corn cobs and put them in a bowl. Dice the red bell pepper and add to the bowl. Add the diced avocado, lime juice, cilantro, kosher salt, and pepper. Gently mix together. Taste for seasoning and add kosher salt and pepper if needed.

  4. Slice the steak against the grain and top with the corn and avocado relish.
