A light and refreshing salad with fresh tomatoes and mozzarella

Ingredients
  • 3 Tbsps olive oil
  • 2 Tbsps balsamic vinegar
  • 1 tsp sugar
  • 1 pint golden cherry tomatoes
  • 4 oz fresh mozzarella
  • kosher salt, pepper
  • fresh basil
Instructions
  1. Mix the olive oil, balsamic vinegar, and sugar together and set aside.

  2. Slice the golden cherry tomatoes in half. Cut mozzarella in similar size chunks as the tomatoes.

  3. Place tomatoes and mozzarella in a bowl, pour the balsamic mixture over top, mix to coat evenly, sprinkle with kosher salt and pepper. Let sit at least 5-10 minutes.

  4. Serve with fresh basil over top.
