Ingredients
  • 1 whole chicken (5 to 6 pounds)
  • 3-4 Tbsps BBQ seasoning
  • 1 12 oz can root beer
  • 1 cup BBQ sauce
Instructions
  1. Pat the chicken dry with paper towels. Rub the BBQ seasoning on all sides of the chicken, including under the skin between the chicken breast (gently separate the skin and sprinkle the seasoning between skin and breast).

  2. Open the root beer and pour 5 ounces of the root beer into a bowl with the BBQ sauce, mix until evenly combined. Put the root beer can on a tray (or foil pan if baking in the oven) and sit the chicken cavity over the can, adjust the chicken so it is sitting upright on the can.

  3. In the smoker: Set the smoker to 250 degrees, gently take the chicken and root beer can off of the tray and place on the smoker for approx 4 hours, depending on size of chicken. Internal temp should be 170 degrees. Brush with the root beer BBQ sauce a few times throughout.

In the oven: Move the oven rack to a lower level. Place the foil pan with the chicken in a 375 degree oven for approx 1 hour and 15 minutes. Internal temp should be 170 degrees. Brush with the BBQ sauce a few times throughout.

  4. Serve with the remaining root beer BBQ sauce on the side for dipping.
