Ingredients
  • 1 pound ground beef
  • 1 Tbsp canola oil (or another oil with a high smoke point)
  • kosher salt, pepper
  • 1 1/2 cups leftover mac and cheese
  • 4 slices colby jack cheese
  • 4 burger buns
  • Optional toppings: BBQ sauce, ketchup, lettuce. pickle, etc
Instructions
  1. Divide the ground beef into four equal portions and roll each into a ball.

  2. Heat the flat top griddle over medium high heat for a few minutes (or could use a cast iron skillet). Spread the oil evenly and place the balls of ground beef on the flat top.

  3. Press each down to a very thin patty with a heavy spatula or grill press. Sprinkle with kosher salt and pepper. Cook 3 minutes and flip.

  4. As soon as you flip the burgers, top each with the leftover mac and cheese and a slice of colby jack. Cook 3 more minutes or until cheese is melted.

Optional: Place the buns cut side down on the flat top for a few seconds to toast them if desired.

  5. Place each burger on a burger bun and add additional toppings of choice.
