Ingredients
  • 2 15 oz cans corn
  • 1 15 oz can black beans
  • 1 15 oz can black eyed peas
  • 2 10 oz cans Rotel or diced tomatoes
  • 1 4 oz can chopped green chilis or jalapenos
  • 1 red onion diced
  • 1 cup italian dressing (or fat free italian dressing)
  • 1 Tbsp sugar
  • kosher salt, pepper
  • tortilla chips
  • Optional: hot sauce, apple cider vinegar
Instructions
  1. Drain the cans of corn and put the corn into a big bowl.

  2. Drain the can of black beans and black eyed peas in a colander and rinse with water. Add the beans to the bowl.

  3. Drain and add the Rotel tomatoes, green chilis or jalapenos, and diced red onion to the bowl.

  4. Pour the italian dressing and sugar into the bowl and stir to mix evenly. Add kosher salt and pepper to taste. Optional: add hot sauce

    Note: If using fat free italian dressing, add a tsp of apple cider to add more tang if needed.

  5. Serve with tortilla chips for dipping.
