Ingredients
  • 1/2 cup blueberries
  • 6-8 strawberries stems removed and chopped into small pieces
  • 1/3 cup pure maple syrup
  • 4 eggs
  • 2 ripe bananas
  • 1/2 tsp cinnamon
  • 2 Tbsps butter
Instructions
  1. Add the berries and syrup to a small saucepan. Bring to a boil and reduce the heat to low and simmer 5 to 7 minutes.

  2. Crack the eggs into a bowl and beat with a fork. Dice the bananas and add them to the eggs along with the cinnamon..

  3. Mash the bananas into the eggs until desired consistency. Leave a few banana chunks if you prefer, or mash until smooth.

  4. Set a skillet over medium heat and add some of the butter. Once melted add a spoonful of banana batter. Cook 1 minute, flip and cook 45 seconds to a minute more. Repeat with remaining banana pancakes.

    Note: These pancakes are delicate so be gentle when flipping them.

  5. Serve with the berry syrup.
