Air Fryer Bang Bang Shrimp Egg Rolls are stuffed with shrimp, slaw, and a homemade bang bang sauce and cooked super crispy in the air fryer!
In a small bowl whisk together the mayo, sweet Thai chili sauce, and Sriracha to make the Bang Bang Sauce.
In another bowl add the cooked, chopped shrimp. broccoli slaw, chopped cilantro, and 1/4 cup of the Bang Bang Sauce. Stir until evenly mixed.
Lay an egg roll wrapper flat, diagonal with a corner facing you. Place some of the shrimp filling in the center of the wrapper. Dip your finger in water and trace around the edges of the wrapper. Fold the side in over the filling, fold the front part over the filling, and roll into an egg roll. Repeat with remaining egg rolls.

Place 6 egg rolls in the air fryer basket in a single layer, seam side down. Spray lightly with the olive oil cooking spray. Set the air fryer to 400 degrees for 6 minutes.
Flip the egg rolls, spray lightly with more olive oil spray and set the air fryer to 400 degrees for an additional 6 to 7 minutes. Repeat with remaining 6 egg rolls.
Serve with the remaining Bang Bang Sauce for dipping.
