A unique and flavorful side dish all made in one skillet!
In a skillet (preferably cast iron) over medium heat, cut bacon with a pair of kitchen scissors into bite size pieces directly into the pan. Cook 5 minutes or until fully cooked. Remove bacon from the pan and set aside. Drain some of the bacon grease, but leave some in the skillet.
Cut the corn off of the cob and dice the small red onion.
Into the same skillet that you cooked the bacon in, with a small amount of bacon grease, add the diced onion and cook for 2 minutes. Then add the corn and cook for 8 additional minutes.
Add the milk and sugar, cooking 2 more minutes.
Stir in the bacon and serve.
