Ingredients
  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup water
  • 1 onion diced
  • 2 Tbsps cajun seasoning
  • kosher salt, pepper
  • 1 cup mayo
  • 2 celery stalks minced
  • 3 green onions sliced
  • 10 to 15 dashes Tabasco sauce
Instructions
  1. Place the chicken breasts in the slow cooker and add the water, diced onion, 1 Tbsp of the cajun seasoning, kosher salt, and pepper. Turn on low for 4 hours.

  2. Shred the chicken with two forks right in the slow cooker. Drain any excess liquid. Let the chicken cool or come to room temperature.

  3. Add the remaining 1 Tbsp cajun seasoning, mayo, celery, green onion, and Tabasco sauce. Stir until evenly mixed.

  4. Refrigerate at least two hours before serving on crackers, toast, or toasted bagel.
