A light and delicious one pan meal that the whole family will love!
Cut the smoked sausage link into slices. Cut each mushroom in half. Cut the peppers, potatoes, and onions into large pieces similar in size (about the size of the turkey slices is what I aimed for).
Set the tomatoes and sausage aside. Place all the other veggies onto a sheet pan lined with foil. Drizzle with olive oil and sprinkle with kosher salt, pepper, and creole seasoning. Toss to coat evenly.
Place in a 425 degree oven for 10 minutes on the middle rack. Add the tomatoes and sausage, carefully toss to mix them in. Roast for an additional 20 minutes.
If you want the top charred, turn the broiler on high for an additional 5 minutes while the baking sheet is on the middle rack (not top rack).
Serve as is or over buttered pasta noodles or rice.
