Thai Chicken Noodle Soup puts an Asian twist on chicken noodle soup using Thai curry paste, soy sauce, and using ramen noodles!
Set a large soup pot over medium and add the oil. Once the oil is hot add the onion, red pepper, and carrot. Cook 5 to 8 minutes, stirring occasionally.
Add the garlic, red curry paste. Sriracha, soy sauce, lime juice, coconut milk, and chicken broth. Bring to a boil, reduce heat to simmer for 5 minutes.
Add the cooked, shredded chicken and ramen noodles. Bring to a boil and reduce heat to simmer 5 more minutes. Turn the heat off and stir in the fresh cilantro.
Serve with more cilantro, lime wedges, diced avocado, chopped peanuts, and more Sriracha if desired.
