Thai Chicken Noodle Soup puts an Asian twist on chicken noodle soup using Thai curry paste, soy sauce, and using ramen noodles!

Ingredients
  • 1 Tbsp vegetable or sesame oil
  • 1 onion diced
  • 1 red pepper diced
  • 1 large carrot shredded or grated
  • 6 cloves garlic minced
  • 2 Tbsps Thai red curry paste
  • 2 Tbsps Sriracha
  • 4 Tbsps soy sauce
  • 2 Tbsps lime juice
  • 1 13.5 oz can lite coconut milk
  • 6 cups chicken broth
  • 3 cups cooked, shredded chicken
  • 2 3.5 oz packages Nissin Raoh Ramen Noodles (noodles only, no flavor packet)
  • 1 bunch fresh cilantro chopped
  • Optional toppings: more cilantro, lime wedges, avocado, chopped peanuts, more Sriracha
Instructions
  1. Set a large soup pot over medium and add the oil. Once the oil is hot add the onion, red pepper, and carrot. Cook 5 to 8 minutes, stirring occasionally.

  2. Add the garlic, red curry paste. Sriracha, soy sauce, lime juice, coconut milk, and chicken broth. Bring to a boil, reduce heat to simmer for 5 minutes.

  3. Add the cooked, shredded chicken and ramen noodles. Bring to a boil and reduce heat to simmer 5 more minutes. Turn the heat off and stir in the fresh cilantro.

  4. Serve with more cilantro, lime wedges, diced avocado, chopped peanuts, and more Sriracha if desired.
