Ingredients
  • 2 pounds salmon
  • 1/2 cup honey
  • 1/2 to 1 tsp each chili powder, paprika, cumin, garlic powder, ground red pepper, kosher salt, pepper
  • juice of half a lime
  • 1 avocado diced
  • 1/4 cup red onion miced
  • 1/4 cup cilantro diced
  • 1/2 cup corn
  • juice of a lime wedge
  • 1 12 oz bag cauliflower rice
  • kosher salt, pepper
Instructions
  1. Cut salmon into 6 pieces and place on a baking sheet lined with parchment paper or foil. You can leave the salmon skin on, place skin side down and the salmon will easily slide off of the skin after baking.

  2. Mix honey, seasonings, and juice of half a lime. Add more or less of each spice to your taste. Brush a third of the honey glaze onto the salmon (save the rest to drizzle on top). Sprinkle a bit more chili powder, kosher salt, and pepper on top if desired.

  3. Bake the salmon in a 450 degree oven on the middle rack for 8 minutes. Set your oven to broil (with salmon still on middle rack) and broil for 2 minutes.

  4. While the salmon is baking, mix the avocado, onion, cilantro, corn, lime wedge, kosher salt, and pepper. Cook the cauliflower rice in a bag in the microwave according to package directions.

  5. Serve with the salmon over cauliflower rice, top with the remaining honey glaze, corn avocado relish and lime wedges. (you may want to add some salt to my cauliflower rice since it was unseasoned)
